This recipe for pão de queijo came from my niece Carol who lives in Germany and drives everyone crazy asking them to bring polvilho doce from Brazil. I think we're luckier in the U.S., since there are many Brazilian stores, even online, where that is available. Carol swears by this recipe, which she makes as often as she can. I must confess that I haven't tried it yet, so we're all learning together here! I would buy a really, really good Parmesan and grate it myself...
1 cup sweet polvilho (polvilho doce)
Grease a cookie sheet and preheat oven to 400°.
Mix the ingredients well and add just enough milk to be able to form the cheese balls, rolling them with your hands. Put the rolls on the cookie sheet and cook them until golden (you'll have to time it, according to your own oven; look at the picture on this page to see what they're supposed to look like when they're done).
This recipe is new to our site, so it hasn't been included in the book. We'll try it and try it until we can make pão de queijo like a pro...then, it may make an appearance in a later edition. But we're hoping the book sells like pão de queijo..:)
