Bolinhos de batata
(Brazilian Potato Balls)

This recipe comes from Aleatha in northern California. When she lived in Brazil, Aleatha learned Brazilian cooking from her "mom" and she is now sharing these fabulous recipes with us. Talk about "matar as saudades..." These are all the sort of recipes that one grows up with in Brazil and I'm sure there are a lot of homesick people out there who are going to enjoy them very, very much. 2 lbs potatoes

2 eggs

2 tbsp finely chopped onion

2 tbsp finely chopped green onion

4 tsp cornstarch (Maizena in Brazil)

grated parmesan cheese, to taste

salt, to taste

bread crumbs or farinha de mandioca to coat the bolinhos for frying

Boil potatoes with skin in salted water. When done, remove skin. Cut and mash potatoes. Mix with all other ingredients except the bread crumbs. Mix well and chill in refrigerator for 1/2 hour. Then form potato mixture into 1-inch balls. Roll balls in bread crumbs (Aleatha likes to use seasoned bread crumbs) and deep fry until golden. Dry in paper towels and serve very hot.
